Citrus Broiled Chicken

This recipe is quite versatile and can be used as a general guide for broiling chicken breasts.

Special Equipment
- Meat Mallet
- Broiler Pan
Preheat Oven
This recipes calls for broiling chicken breasts. In general, set the oven rack such that the chicken breasts are 5" from the heating element. Be sure to take into account a broiler pan (if used). There is no need to preheat the oven; turn on the broiler element to "high" about five minutes before you're ready to cook.
Ingredients
- 4 Chicken Breasts
- 2/3 cup Soy Sauce
- 2 ½ cup Orange Juice
- 2 tablespoons Lime Juice
- 2 Cloves of Garlic, minced
Preparation
- Using a meat mallet, pound chicken flat and even, remove excess fat, etc.
- Combine
- Soy Sauce
- Orange Juice
- Lime Juice
- Garlic
Marinate
- Marinate chicken in mixture for no longer than 20 minutes.
Broil
- Broil chicken, skin side down, 5" from heat for 8 minutes.
- Turn chicken and broil 6 more minutes.
