This is my basic cookie recipe. It's a perfect starting point for chocolate chip cookies, oatmeal cookies, or whatever else you may desire to make. Add up to two cups of "chips", nuts, dried fruit, etc to finish off this recipe.

Special Equipment

  • Electric Stand Mixer
  • Cookie Baking Sheet
  • Parchment Paper

Preheat Oven

  • Preheat oven to 350°F

Ingredients

  • ¾ cup Unsalted Butter
  • ¾ cup Sugar
  • ¾ cup Dark Brown Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • ½ teaspoon salt
  • 2 cups All Purpose Flour

Test

  • Cut butter down to ½ cup
  • Cut sugar down to ½ cup
  • Do not use semi-sweet chocolate. It's too rich and sweet.


Preparation

Wet Ingredients

  • Using a stand mixer, cream together butter and sugars.
  • Add eggs, one at a time, beating well after each addition.
  • Add vanilla
  • Beat at high speed until mixture is light and pale

Dry Ingredients

  • Sift together
    • flour
    • baking soda
    • salt

Combine

Do not overbeat! Doing so will result in tough cookies

  • Add to dry ingredients to wet ingredients.
  • Mix just until less than combined.
  • Add up to 2 cups chips, nuts, dry fruits, etc.
  • Mix until incorporated.

Bake

  • Drop a modest spoonful of dough onto parchment lined cookie baking sheet.
  • Bake for 12 to 14 minutes

Cool

  • Remove cookie sheet from oven and allow cookies to cool for five minutes.
  • Transfer cookies to cooling rack.

Variations

  • 1 cup chocolate chips + ½ cup dries cranberries + ½ cup oatmeal.
